Vinification: stainless steel vats of 50 HL, dry selected yeasts, soft extraction of polyphenols from the skins with the use of delestage”.
Elaborazione/Affinamento: the wine completes the malolactic fermentation in barriques of Allier at a controlled temperature between 20 and 23 ° with batonage and micro-oxygenation. Aging is about 18/24 months in barriques of Aliier (12% new and the rest of a year) and then another 18 months in oak barrels of 35 hl. After bottling, a minimum aging of 12 months is foreseen before its marketing. More than any other Sangiovese produced by Casaloste, the Don Vincenzo proposes all the variability that the Sangiovese vine draws from the different climatic conditions of the vintages, exalting them in a kaleidoscope of olfactory and gustatory sensations that makes every year the Don Vincenzo a unique and different wine even if bound by the unmistakable thread of its typicality.
Color: intense ruby red with garnet reflections
Nose: a wine of great personality, with a variegated and persuasive bouquet, it shows notes of deep berries, plum, balsamic and spicy notes. Also present sweet tobacco, cocoa and toasted coffee.
Bocca: considered a very complex wine that requires attention, has an elegant and decisive input with an enveloping development supported by a low acidity that harmonizes with a dense tannic texture that gives a very persistent, almost sweet finish.
Abbinamenti: it is able to give you special sensations if served with well prepared red meat or with long aged cheeses.
